The Concept

Yuzu holds tradition with one hand and reaches past it with the other. The technique is classic; the expression is not. Every course is built to be watched as much as tasted.

The Cellar

From Hanuman to Yamazaki 18.

The cellar runs the full register — cold local beer, fine sake, Dassai Beyond, a 50-year Moutai — each pour chosen to sit beside the course.

The Counter

The counter is the theater.

Thirty seats in two wings, every one facing the chefs. Nitrogen fog drifts, oak smoke lifts from under glass, a torch finds the fat of A5 wagyu — each course finished within arm’s reach. Two seatings daily: lunch and dinner.
